Destein Vineyard is located in Bennett Valley, a relatively cool appellation, almost completely within the Sonoma Valley AVA and overlapping into some areas of the Sonoma Coast AVA and Sonoma Mountain AVA. The region receives a moderating effect on its climate from Pacific Ocean through the cool coastal fogs and breeze that creep into the area from the southwest, through Crane Canyon between Sonoma Mountain and Taylor Mountain. Owing to a gap in the coastal range, Bennett Valley experiences more fog and cooler weather than surrounding areas in Sonoma County. Destein Vineyard is on a northeast hillside, resulting in measured sun exposure and a relatively long hang time.
The fruit was hand-picked at 27 Brix on September 6, 2008, and the fruit was 100% de-stemmed and lightly crushed. Using Pasteur Red yeast, fermentation went to complete dryness in 38 days. Malolactic fermentation went to completion. After fermentation, the wine aged 20 months in neutral French oak barrels.
